Description

This handmade pure copper grater is a convenient size (No. 4) for home use. The blade is hand-carved into a copper plate hammered by an artisan, resulting in a sharp and durable grater. It grates radish without breaking its fibers, resulting in delicious, smooth grated radish. The finer teeth on the back can be used for grating condiments such as wasabi and ginger.

Care

After use, rinse it promptly with water and do not use a cloth (as fibers will get caught in the blade). Instead, pour hot water over it and dry it using the residual heat. If vegetable fibers are difficult to remove, it is convenient to rinse them off with an old toothbrush. If the blade becomes dull, you can have it resharpened by a craftsman (for a fee).

Craftsmen hammer the copper plates to harden them, then manually sharpen each blade. These slightly uneven blades are the secret to smoothly grating ingredients without having to turn them. They can also be sharpened by scraping off the old blade and creating a new one, creating tools that can be used for a lifetime and passed down from parent to child, and from child to grandchild.
