Description

This pure copper grater (size 3) features sharp blades hand-carved by artisans. The uneven blades, characteristic of handmade products, cut through the radish cells without crushing them, resulting in a soft and fluffy texture without making the radish watery. The back has fine holes for gratering condiments, such as wasabi and ginger. Its sharpness, recognized by professional chefs, brings out the natural flavor of the ingredients.

Care

After use, rinse it promptly with water and do not use a cloth (as fibers will get caught in the blade). Instead, pour hot water over it and dry it using the residual heat. If vegetable fibers are difficult to remove, it is convenient to rinse them off with an old toothbrush. If the blade becomes dull, you can have it resharpened by a craftsman (for a fee).

Craftsmen hammer the copper plates to harden them, then manually sharpen each blade. These slightly uneven blades are the secret to smoothly grating ingredients without having to turn them. They can also be sharpened by scraping off the old blade and creating a new one, creating tools that can be used for a lifetime and passed down from parent to child, and from child to grandchild.
