These handmade pure copper graters are made by repeatedly hammering thick copper plates, then hand-carving each blade. The irregularly positioned blades allow new surfaces, such as daikon radish and wasabi, to come into contact with the blade one after another, resulting in efficient grating with just the right amount of moisture.

Oya Seisakusho is a workshop that has been making copper graters for three generations. The process, in which artisans hammer and manually sharpen each blade, is so laborious and time-consuming that they can only produce about three graters per hour, or about 24 per day. Even now, with the number of copper grater makers in Japan dwindling, Shigeki Oya continues to create tools that can be used for decades, repairing them as he believes in "making things that bring joy to the user." The tradition continues to be preserved today, with the sound of the hammer echoing from morning to night.
